Produce a great spirit as the Old Winery, takes time, but not only. It takes much more. For starters, high-quality grapes are carefully selected in the vineyards of Quinta da Aveleda. The result is a light wine, balanced acidity and alcohol content. The wine is then subjected to slow and distillation in a still cared Charentais, brought from the Cognac region in France. The wonderful amber color and rich bouquet, stem from a long rest in oak casks from the Limousin region, famous for its unique characteristics of wood. It is the mastery of the Fifth cellarers, men of insight and prodigious memory, which comprises the Old Winery as a true masterpiece. The final touch is given by Mother Nature ... Adega Velha in the shadows of the imposing granite building in the center of Fifth, where the barrels rest, the tiny arachnids are the most loyal allies cellarers. Better than anyone, he knows that so no unwanted insects will stay in old wooden casks and thus disturb the deep repose of the 12 years of the precious liquor.
