Rollmops is a herring fillet rolled and stuck in a pickle. These rollmops fillets will be perfect enjoyed as an appetizer, or as an accompaniment to potatoes, onions and green salad. They can also be enjoyed on a slice of black bread.

It is a specialty common in the North and East of France, in Germany, Poland, England and in Scandinavian countries.

A little etymology:

The origin of its name is quite curious. This word comes from the German "rollen" (to roll) and "mops" (pug) but we don't really know how to explain what the pug (breed of dog) comes to do here. Some think that the round face of this breed of dog is reminiscent of these little rollers.
