For the salad

125 g couscous, raw
125 ml vegetable stock
1 Tablespoon(s) tomato paste
2 Tablespoon(s) olive oil
0.5 pepper, yellow
0.3 cucumber
10 cherry tomatoes
1 spring onion
2 Sprig(s) mint, fresh
2 Sprig(s) parsley, fresh
salt, pepper, chili, garlic to taste

Prepare the salad

Bring the vegetable stock to the boil with the tomato paste and a little salt. Stir in the couscous, remove the pan from the heat and leave the couscous to stand, covered, for 5 minutes.

Loosen the couscous with a fork while stirring in olive oil. Now leave the couscous to cool for a few minutes while chopping all the vegetables and herbs with the multi chopper.

Now mix everything together and season to taste with salt, pepper, chilli and fresh lemon.
